Mediterranean Lentil Chickpea Salad

This Mediterranean Lentil and Chickpea Salad is so delicious and filling. It’s full of fresh herbs, salty feta cheese, and hearty chickpeas.

My mom and I came up with this recipe kind of by accident. My mom had picked up a few ingredients from Trader Joe’s and we decided to throw them all together. This delicious salad was born!

Key Ingredients for Lentil Chickpea Salad

Trader Joe’s Greek Chickpeas with Parsley and Cumin

I know it’s so annoying to ask for a very specific ingredient in a recipe, but this really is the key! Trader Joe’s sells a little can of chickpeas that are marinated in olive oil with lots of spices. These chickpeas are so good! They are full of flavor. In this recipe, we’re going to dump the whole can in, and the liquid from the can will act as the dressing for the salad.

If you don’t have a Trader Joe’s nearby or can’t get this product, you can use plain chickpeas, but you’ll have to add some oil and spices to the salad.

Steamed Lentils

I used Trader Joe’s Steamed Lentils just for ease, but you can totally use lentils that you cooked yourself.

Red Onion

I am not the biggest fan of red onion, but I think that 1/4 cup is the perfect amount in this salad.

Arugula, Parsley, and Mint

Did you know that arugula is actually considered an herb? The combination of these three herbs is so yummy and fresh.

Cucumbers

I like to use mini Persian cucumbers because they are so yummy and crunchy.

Feta cheese

I love feta cheese. That’s all I have to say.

Chopped Pistachios

Pistachios are so good in this salad. I highly recommend.

Lemon Juice

Fresh lemon juice at the end rounds out all the flavors.

What Should I Serve with Lentil Chickpea Salad?

  • Serve this salad as a light lunch on its own.
  • Pair with grilled chicken, steak, or fish for a protein boost.

Chickpea and Lentil Salad

This salad is hearty, delicious, and so easy to make.

Ingredients

  • 1 can Trader Joe's Greek Chickpeas with Parsley and Cumin (do not drain the liquid)
  • 1 cup steamed lentils
  • 3-5 Persian cucumbers or 1 english cucumber
  • 1/4 cup chopped red onion
  • 2 cups chopped arugula
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/3 cup feta
  • 1/4 cup chopped pistachios
  • lemon juice and salt and pepper to taste

Instructions

  • Combine all of the ingredients together in a bowl. Toss and top with lemon juice, salt, and pepper to your liking.
